Have any of you tried a FIS? It is an overlooked cut of beef!
I buy 'em all the time and stick 'em in the freezer. Six to eight $$USD usually (try getting a ribeye for that cheap!).
Once thawed, I give it a good rub down with a quality dry rub. A commercial one I like is "Famous Dave's Steak & Burger" (good stuff). Once rubbed, then chill while covered in frig.
Prior to grilling, remove from frig and allow meat to reach room temp.
I like mine rare, so I grill on med'high for about three minutes each side. I also like to rub it down with virgin olive oil prior to placing on grill.
Don't use a fork...use tongs. Once cooked to your liking, remove from grill and let rest 5-8 minutes be for cutting.
Now, I like using it for fahitas, sliced thin angling across the grain with grilled vegtables, refried beans and home-made guagmoule. Enjoy.
